Le Gruyère AOC Switzerland is joining forces with the Swiss Team for the prestigious Bocuse d'Or competition to be held during the 2009 International Hotel, Catering and Food Trade Exhibition (SIRHA) in Lyon, France.
Le Gruyère AOC Switzerland will have a stand at the SIRHA, where its presence will be reinforced by its partnership with the Swiss National Team for the Bocuse d'Or.
Le Gruyère AOC, a Swiss cheese with a pressed, heated texture - the fruit of the mountainous regions of western Switzerland - has been delighting taste buds for centuries.
All the craftsman involved in producing Le Gruyère AOC are committed to specifications that are both strict and precise, defining the requirements for the "Gruyère AOC" or "Gruyère d'alpage AOC" designation to be applied to a given cheese.
It is still produced in a traditional way that has been passed down over the ages, faithfully applied every day by the partners in the process: milk producers, cheese-makers and the people in charge of the maturing process.
Over the years Le Gruyère AOC, which takes its name from the Gruyère region in the canton of Fribourg, has gained pride of place for itself on cheeseboards throughout the world.
It takes 400 litres of milk to produce a wheel of Le Gruyère AOC Switzerland, but not any old milk! Only raw milk from cows fed with grass and hay is allowed.
The cheese is matured on spruce-wood boards in cool, humid cellars. The care and attention given by the various people involved are what guarantee the different flavours that are so distinctive of Le Gruyère AOC Switzerland.
And only Le Gruyère AOC Switzerland bears an imprint on its rind certifying the authenticity and origin of each cheese.
Le Gruyère AOC Switzerland is classified according to its age and origin. Le Gruyère AOC Classic is the mildest form of Gruyère, with a fine, subtle and aromatic taste. Le Gruyère AOC Réserve is matured for ten to sixteen months, which is what gives it its slightly grainy, fruity flavour. Le Gruyère AOC d'alpage, with its distinct, unique taste evocative of high-lying pastures, is only produced during the summer months. They all share the same qualities, but reflect the preferences of different consumers.
