Tomato Cake with Le Gruyère AOP

Today, an idea for a quick recipe: friends turn up at the last minute, the fridge is almost empty. Tomatoes and a good slice of Le Gruyère AOP… Now you can make some little cakes. Nice and soft, they are ideal for a drinks reception, lunch or brunch.

Tomato Cake with Le Gruyère AOP

  • 3
    eggs
  • 120 ml
    milk
  • 100 ml
    vegetable oil
  • 150 g
    flour
  • 10 g
    of baking powder
  • 300 g
    tomatoes
  • 150 g
    Gruyère AOP grated
  • 10 g
    of parsley
  • 1 pinch
    of salt
  • 1 pinch
    of pepper

Preparation

Tomato Cake with Le Gruyère AOP

  1. Cut the tomatoes into little pieces.
  2. Put the milk and oil in a pot, then heat it up in the microwave for a few seconds.
  3. Whip the eggs in a large bowl, then add flour, baking powder, salt and pepper. Mix well.
  4. Add the milk and oil and mix well.
  5. Add the tomatoes, diced Le Gruyère AOP and chopped parsley and mix well.
  6. Pour the mixture in a mini-cakes baking tin and sprinkle some grains on top of each mini-cake.
  7. Heat in the oven at 180 °C for 25 min. (watch the oven to be sure) for mini-cakes, or 45 min. for a big cake.

Delicious to know

Check readiness by piercing the cake(s) with a knife: if it comes out dry, the food is ready, otherwise bake for a few more minutes.
